Fluffy Matcha Pancakes | Lime Zest Glaze

The day Matcha was introduced to me was a good day indeed. The history of Matcha is long and plentiful. Known in both Chinese and Japanese cultures it is used both for drinking and in religious ceremonies. Not only that but there are also grades to this powdered tea: Ceremonial: which is the highest grade and used in tea ceremonies and Buddhist temples, Premium: which is the next on the list has all the nutritional content and still very expensive and finally there is the Culinary: which is used in cooking or tea houses. I can’t say I have had the highest grades of this tea but the ones I have had I love and I can certainly tell the difference between quality when I have it from different places. Before it became the culinary craze that is Matcha today it was part of history and that is what intrigues me about it. I often speak on my my love of experiencing different cultures through food and this tea is one of them.

With this recipe I wanted to create something delicious and sweet but still retain some of that earthiness that Matcha is known for. The final product was fluffy, deliciously green & just lightly sweet. The idea to add lime zest came from wanting to have this taste fresh and citrusy- in adding it to the glaze you get a a burst of sunshine & tangy notes. These pancakes are easy to make, and if you want to skip the glaze even easier…but I mean really who wants to skip the glaze? 😀

I used the mini griddle from Dash which is literally one of the best inventions ever. I have both the griddle and waffle maker and they work so well. You can also just fry them up on a stove top griddle.

Fluffy Matcha Pancakes|Lime Zest Glaze

Fluffy pancakes with a hint of earthiness & all the right sweetness

Ingredients

Pancakes

  • 1 1/2 Cups King Arthur All Purpose Flour
  • 2/3 Cups Brown Sugar
  • 2 Large Eggs
  • 1 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/8 Tsp Salt
  • 1 Tbsp Lime Zest
  • 2/3 Cups Pillars Drinkable Yogurt (half water, half yogurt)
  • 1/4 Cup Melted Butter
  • 2 Tbsp Matcha Culinary Green Tea Powder

Zesty Lime Glaze

  • 1/2 Packet Cream Cheese, softened
  • 1 Tsp Lime Zest
  • 1 Cup Powdered Sugar
  • 1 Tsp Vanilla
  • 3 Tbsp Pillars Yogurt (Mix with water)
  • Pinch Salt

Instructions

  1. In a mixing bowl stir all the pancake ingredients together until well mixed. For the Pillars Yogurt ( or any yogurt you use) do half yogurt, half water. By using this I added some extra protein to these pancakes  & therefore more filling.

    If you have the mini griddle, heat it up and pour about half a ladle into it and cook. Otherwise on stovetop griddle pour in and cook until you start seeing bubbles form then flip to other side. 

    In a stand mixer, add cream cheese, vanilla, zest * pinch of salt. Whip together.  Add sugar and beat on medium until glaze forms. Add Pillars ( or other yogurt) mixture until glaze reaches consistency you want.
