Roasted Heirloom Tomatoes w/Feta & Balsamic Glaze

I was on a cooking kick last night…I made some Double Chocolate Whoopie Pies.  Yes you saw correctly…”Double Chocolate”. Check out that recipe because they are wonderful! Then I decided I wanted to make a quick savory/sweet dish using some heirloom tomatoes I had bought from Trader Joes, Feta and then the balsamic glaze I had made yesterday. It came out amazing and I loved it so much I put it on toast and crunched away happily like I had invented bread or something.

Needless to say you wont be disappointed when you try this recipe. The roasting of the tomatoes brought a juicy sweet delight with every bite and the balsamic and feta were the perfect additions. So enjoy this quick, healthy recipe and use as a topping for meat, bread, or over a nice salad. Perfecto!

Roasted Heirloom Tomatoes w/ Feta & Balsamic Glaze

1 Carton of Trader Joes Heirloom Tomatoes

3 Tbs of Homemade Balsamic Glaze

As much Feta as you want

Sea Salt & Pepper

Instructions:

Preheat oven to 350

Cut every tomato lengthwise and lay flat on parchment paper in a baking dish. Sprinkle Evenly with Black Pepper and Sea Salt and roast for 30 minutes or until juices start gushing and tomatoes start getting wrinkled.

Let cool. Then drizzle with homemade balsamic glaze and sprinkle with the amount of feta you want.
