Nutritious Eats While Navigating Being a New Mom

It’s been a while Mavens, and I am so happy to be back! Especially because I’m going to be talking about and sharing with you all my new journey as a mom and how nutritious eats have helped me on that journey! I learned early on that if I didn’t eat right I suffered whether it was lack of energy or feeling like I was starving at the end of the day, I realized that having solid, nutritious options had to be part of my life and on a consistent basis. Being a mom is hard. Postpartum is hard. Your whole body changes and you are kind of left scrambling trying to figure out how to make sense of your new life, one in which taking care of a mini human is your new every day plus taking care of yourself! It took time and trial and error to find a system that works for me and to be perfectly honest dairy has been a big part of that!! One of the ways in which dairy has been so important during this phase of life is both my digestive health and also how energized I feel every day. Dairy like yogurt is super helpful in aiding digestion and milk is great, energy sustaining fuel because it has the protein to keep me from crashing. Whether I am adding it to an easy recipe or to my morning (and afternoon…hello mom life!) coffee, it has been a great way for me to keep going!

What I ended up doing was coming up with easy to make, quick recipes that kept me moving and thriving like this Mini Egg Frittata recipe from New England Dairy linked here plus a few other bonus ones that I wanted to share with y’all! Not only is it super tasty but it’s perfect for a quick grab and go in the morning. Plus now the baby is getting old enough to nosh on it as well (he loves eggs!!)

 

Some other quick new favorites:

 

Overnight oats

I put these together the night before and I love it because I can batch it for a couple days! Nutritious, filling and delicious, everything I need to get through busy mornings and more.

 

Ingredients:

1/2 cup Quick oats

1 cup milk (whole or 2%)

I add one or two of the following: Peanut Butter, Pumpkin Puree or fruit to my liking

Dash of Cinnamon

I mix everything together and leave it overnight in the fridge – all set the next morning to go to work!

 

Quick Lunch/Dinner Taco

I have a taco obsession so of course this is part of my quick recipes for dinner and great for lunch leftovers!

 

Ingredients:

1 lb ground chicken

1 packet taco seasoning

Salsa

Shredded Cheese

Corn tortillas

1/2 Cup diced tomatoes

I also include sour cream or guacamole as additions.

 

Instructions: Over medium heat add olive oil and cook meat until cooked through and browned, add the taco seasoning and mix together until evenly coated and then assemble your tacos to your liking.

 

Everyday of this mom and postpartum journey has been different. The days can seem long and more often than not I am exhausted but without nutritious eats like the ones I shared it would be so much worse! So find something that works for you, come up with a plan and start with small steps by incorporating dairy in different areas of your nutrition and see how it helps!
