Does anyone remember that commercial for Cocoa Puffs? Anyone? 90’s child here and I just remember “crazy for cocoa puffs”. This reference is being done because the chocolate part of this recipe equation reminds me distinctly of this cereal.
I always like to mix things up when making a recipe and if its a recipe I get off the internet then I like to add my own touches so I can call it my own. In this case I had looked at a recipe for Chocolate Whoopie Pies with Marshmallow Cream Filling, which sounds great in its own right, but I wanted to go a little spookier with it…Halloween is coming up after all and its the perfect time to be inventive… 🙂
I decided I was going to make it Double Chocolate Whoopie Pies w/ Pumpkin Buttercream Filling and the result was a chocolatey, pumpkin spicy, crumbly mix. I would suggest you add a bit more fat (butter/oil) to the mix if you want a less crumbly cookie part, but I truly enjoyed it. Try it out let me know what you think and what extras you would add.
Double Chocolate Whoopie Pies w/ Pumpkin Butercream Filling
Whoopie Pie
2 Cups All Purpose Flour
1 Tsp Baking Soda
1/4 Tsp Salt
1 cup of Sugar
3/4 Cup Buttermilk
2 Tsp Vanilla
1/2 Cup Semisweet Chocolate Chips
6 Tbs Butter
1 Egg
Filling
3 Heaping Tsp Organic Pumpkin
2 Tsp Pumpkin Pie Spice
1 Stick of Salted Butter
3-4 Cups Powdered Sugar (depending on consistency you would like)
Instructions:
Preheat Oven to 350
Put all whoopie pie ingredients together, mix until smooth, put heaping spoonfuls on a greased cookie sheet two inches apart. Bake 12 minutes. Cool completely
For filling: Whip butter in stand mixer until whipped and creamy, add powdered sugar slowly mixing in on medium speed, add pumpkin spice and pumpkin, beat on medium until desired consistency is met.
