Flourless Brownies

I have the whole week off and I have been spending time with my bestie and her twins my niece and nephew. We decided to come together on some food collaborations so I could post them to my blog and the results were marvelous. Two items I have the recipes for you all, another yummy food item is still in the works and will soon be posted once we get the recipe perfected.

More collaborations are also coming tomorrow and Ill be posting these authentic ethnic dishes to my blog and I cant wait.

Today we mixed it up by making really flavorful, healthy recipes. One savory and one sweet. The last experiment will be posted at the bottom and please feel free to leave me comments.

Both recipes are good for a myriad of diets and allergies.

Let me start with the Flourless Brownies, this was the first time making a dessert that used no flour and I was so impressed by the end result. The consistency was moist and the spices we used really made it stand out.

Flourless Brownies4

1 Cup Semi-Sweet Morsels

1 1/2 Cup Zucchini

1 Cup all natural peanut butter

1 egg

2 Tsp Ginger

1/3 Cup Raw Honey

2 Tsp Vanilla

1/2 Banana

1 Tsp Baking Soda

1 Tsp Cloves

1 Tsp Allspice

Instructions:

Preheat Oven to 350

Mix all ingredients together and put in a greased pan or spring form pan. Bake for 35 minutes until toothpick inserted in middle comes out clean.

Moist, flavorful with a hint of spice

The next recipe I want to share with you is the Cajun Spiced Lettuce Wraps. These are a great alternative to tacos and the flavors melded perfectly together. My friend made the wonderfully spiced cajun sauce for the top of the wraps and the quinoa while I handled the chicken. Amazing and I hope you enjoy this one.

Cajun Chicken Lettuce Wraps

Chicken

4 Chicken breast Tenderloins, boiled and shredded

1/2 an Onion

3/4 Cup Diced Red & Yellow Bell Peppers

Olive Oil for cooking

1 Tsp Chili Powder

2 Tsp Cumin

1 Tsp Red Pepper Flakes

1/2 Tsp Paprika

Salt & Pepper to taste

Saute vegetables and spices until translucent and fragrant, add chicken and mix well until heated through and everything is well mixed. Set aside

Quinoa

1/2 Cup Quinoa

1 Cup Water

1 Chicken Boullion Cube

1/2 Tsp Turmeric

Add everything together cook for 15 minutes until finished

Sauce:

2 8oz cans Tomato Sauce

1/2 an onion

2 Tsp Cajun Seasoning

3 Cloves Garlic

1/2 Tsp Hot Pepper Flakes

Saute onions until translucent and mix everything else in bringing to a simmer around 10 minutes cook time

Put chicken in lettuce wraps, top with quinoa and sauce!

Spicy, rich, healthy and clean eats
