Local Bounty

Today I was feeling under the weather and slept a good part of the day before going out and running errands, shopping for food etc. A huge part of why I was able to function was an Elixir made by Red Antler Apothecary, whom I have mentioned in previous blog posts and this consisted of Raw Apple Cider Vinegar, Raw Honey and Smashed Garlic. Another contributing factor was the Beet Goodness juice from Powerhouse Juice whom I have also mentioned.

I try as much as possible to stay away from medications and syrups etc especially if I can find a natural remedy that wont harm my body and really promotes wellness from inside out. This being said I was able to cook and bake because I felt so much better and can now blog! Yes!

I went to Trader Joes and got some lovely items that will be used for prep for the week and to try new things for my blog.

I decided to use my new Chutney and Spice Rub from Lyndigo Spice to do a vegetable stir fry and some baked chicken. The rice I made incorporated the Spice Rub. To do the chicken I simply put 3 tbs of the Pineapple Chutney in a bowl mixed that and the chicken tenderloins thoroughly and let marinate for 2 hours.

For the rice I put 3 tsp of the spice rub into the water and some butter then cooked brown rice as directed on the package. The aroma was amazing!

For the veggie stir fry I cut up a bunch of mixed vegetables, put olive oil in a pan, mixed up the veggies with the Pineapple Chutney from Lyndigo Spice and sauteed until well cooked. The vegetables came out perfectly with a sweetly tangy flavor.

I also made a cake….yes yes I know it defeats the purpose of being super healthy with all the previous. I just wanted to use the fresh blueberries I had bought from Trader Joes and thought they would be perfect in this cake. This is great as both a light dessert or a quick breakfast slice with coffee.

Blueberry Cakes

1 1/2 Cup of All Purpose Flour

1 Pint Blueberries

2 Tsp Lemon Extract

1 Cup of Sugar

2 Eggs

1 1/2 Tsp of Baking Powder

1/2 Tsp Salt

1/2 Cup of Milk

Instructions:

Mix everything together. . .Pour into greased 8 inch springform pan. Bake for 30 min or until toothpick inserted in middle comes out clean.20151207_202522
