Fall in Love with Breakfast

I love breakfast, and I love reading about what people eat for breakfast in different places. I like to experiment with different flavors and breakfast gives me the opportunity to do this. I came up with three separate recipes that incorporate good, clean healthy eating with the flavors of Fall and give you the opportunity to mix and match how you see fit. One of these recipes is half dessert/ half breakfast and the only one with any type of sugar. I hope you enjoy these and share 🙂

Spiced French Toast

I was going for a healthier version of french toast, so feel free to add sugar  and vanilla if you would like.

4 Slices of Whole Grain Bread

1 Egg

1 Tsp Pumpkin Spice

1 Cup Almond Milk

Instructions:

Beat the one egg, milk and pumpkin spice together. Over a medium high skillet fry each side of the french toast until browned. Enjoy with a drizzle of honey or jam.

Overnight Pumpkin Spice Oats

I have made overnight oats before and posted a recipe about them previously. These ones have a tinge of spiciness from the Pumpkin Pie spice that I have from Trader Joes and they are very healthy. You can add some honey or agave  to this for added sweetness.

2 Cups of Old Fashioned Oats

4 Cups of Unsweetened Vanilla Almond Milk

1/2 Tsp of Pumpkin Pie Spice

Container large enough to hold this with a cover

Instructions:

Mix everything together, cover and leave overnight in the fridge. When ready to eat it, heat it up and serve warm. Drizzle honey and sprinkle some cinnamon if you would like.

Apple Pumpkin Bake

With this recipe , while still quite healthy I added brown sugar into the crust and also for the topping.

1 Granny Smith Apple

2 Tbs Organic Pumpkin Puree

1  Cup of Old Fashioned Oats

1 Tsp Pumpkin Pie Spice

1 Tbs Olive Oil

1 Tbs Brown Sugar

1 Tsp Unsweetened Cocoa Powder

Topping:

3 Tbs Brown Sugar

1/2 Cup Old Fashioned Oats

1 Tbs Olive Oil

1 Tsp Pumpkin Pie Spice

Instructions:

Preheat oven to 350; core apple and cut into rings. In a bowl mix all the crust ingredients together, pour into pan and press down until it forms a crust all around. Arrange the apples on top of the crust. mix topping mixture together and sprinkle on top of the apples. Bake for 20-30 minutes.

Voila!
