Testing out recipes is simply one of my favorite things to do. I enjoy working with flavors, texture and while it doesn’t always work out sometimes you get a gem like this in your repertoire that you can cook easily and can change to your taste depending on your diet needs.
This dish is full of flavor and kicks you right in the taste buds. There are a few components of this dish that make it stand out such as the crispness of the cardamom and creaminess of the coconut cream. I was so happy I finally perfected this recipe- a big shout out to my friend over at Mom of the Twins Blog for suggesting cardamom!
As side dishes I used fresh Avocado and Tomato along with brown rice. Perfect compliment to strong flavors in the chicken. Please try this recipe out and let me know the changes you make and how you modify it, I want to hear all about it in the comments!
Zesty Cajun Chicken
1 lb. Ground Chicken
1 Can Coconut Cream or Coconut Milk(full fat)
1 Can Muir Glen Fire Roasted Dice Tomatoes
1 1/2 Cups of Diced Fresh Mushrooms
3 Cardamom Pods (broken up and seeds thrown in)
1 Tsp Coriander
2 Tbs Cajun Seasoning
1 Tbs Dried Basil
2 Tbs Butter
1 Tbs of Olive Oil
Sides: Sliced Tomato & Organic Avocado
In a large frying pan melt the butter, add the chicken- cook through. Add Cajun and Basil. While this is cooking in a different pan saute mushrooms, when browned add tomatoes. Add the meat mixture into the tomato mixture. Add cream or milk. Let simmer for 10 minutes on low heat.
Break open cardamom pods and pour seeds into the meat, add the coriander. Cover and let simmer for another 10 minutes.
Crack open an avocado and slice up some tomatoes. You can either eat this over vegetables or eat it over brown rice. It is a versatile dish full of flavor so you don’t need much!
