I decided yesterday to experiment with some baking, but then again when do I not experiment with food period? I had bought some fresh limes and wanted to see what I could make so I went online found a basic cake recipe just for measurements but completely changed it from top to bottom. I then decided I hadn’t had enough of limes so I did a lime glaze. I mean why would there ever be enough of that tangy, tart but sweet fulfilling fruit?
Recipe below of my Vanilla/Lime Loaf with Lime Glaze!
Vanilla Loaf with Lime Glaze
Ingredients:
Loaf
1 Cup Whole Wheat Flour (I used King Arthur Brand)
1/2 Cup Brown Rice Flour ( I used Bob’s Red Mill Brand)
1/2 Cup Almond Milk
1/2 Cup Olive Oil
1 Cup Sugar (all I had in the pantry; feel free to use substitutes)
1/2 Cup Applesauce
2 Eggs
2 Tsp Vanilla
1 Tsp Baking Powder
Juice from one lime if you want it sweeter/two if you want it more tart
Glaze
1 Cup Confectioners Sugar
2 Tbsp Fresh Lime Juice
1 Tsp Vanilla
Directions:
Preheat oven to 350
Take the cup of sugar and cream it together with the olive oil add the eggs, vanilla, and Lime juice and stir well. In a separate bowl mix the flours and baking powder and then add slowly to wet mixture stir well. Add applesauce mix in well. Final step is to add the milk to smooth out the mixture and then pour into a greased loaf pan. ( I used a glass loaf pan).
Bake for 30-40 minutes or until middle is cooked, test it with a toothpick.
While the cake is baking/cooling prepare your glaze. Stir all three ingredients well and then pour over loaf once cooled
