Easy One Pot Creamy Cajun Chicken Pasta

For as a long as I can remember I have always loved to cook. Learning my own native Puerto Rican cuisine to exploring others is a huge part of my life. Cooking relaxes me, makes me happy and it helps me feed my family in a way I feel is best. Using some real good ingredients from as many possible local sources as possible so I can provide some great nutrition. And as long as you don’t mind cleaning afterward, I will cook you a feast…( hahah just kidding, well actually not really). I think that sometimes we are all in such a hurry we can’t enjoy the simple pleasures of a home cooked meal and while i love eating out as much as the next person ( DUH I write about food 🙂 ) I do enjoy eating home cooked meals I prepare myself.

You should never give up on flavor, even when you are trying to cook and easy, quick meal. This creamy pasta is the stuff of greatness for those nights you don’t want to spend a lot of time cooking in the kitchen. At the end of the day spending time with loved ones is the most important part of the day so you want to make sure not to spend too much time in the kitchen. Again, back to family whatever that means to you- because sharing a meal can provide some of the best moments and memories.

The kick of the cajun seasoning with the creaminess of the sauce is the perfect combination. I also am obsessed with using sundried tomatoes, they bring a different flavor profile, although you can absolutely substitute fresh tomatoes if you prefer. Make it ahead of time and have enough for a couple days ( or maybe eat it all in one night) HAH! All I know is that you are going to go bonkers when you get a taste of this! Let me know what you think!

Simple, delicious and easy

You can put as much or as little parm as you want…but I would put lots 🙂

A one-pot meal for your busy weeknight dinners

Ingredients

  • 1 1/2 lbs Ground Chicken
  • 3 Heaping Tbs Sundried Tomatoes
  • 1 Box Pasta( whichever one you want)
  • 2 Tbs Cajun Seasoning
  • 1 Tbs Mexican Oregano
  • 1/2 Pint Heavy Cream
  • 3 Tbs Butter
  • 1 Tsp Crushed Red Pepper
  • 1/2 Cup Fresh Parmesan Cheese
  • 1/2 Tsp Black Pepper
  • Pinch Salt

Instructions

  1. Boil the Pasta as direct until it reaches "al dente" texture. Set aside

    In a large pan melt the butter and cook meat until browned. Add seasonings, stir in. Add heavy cream, sundried tomatoes, pepper, and salt. Cook on a low simmer for a few minutes. Add pasta and mix thoroughly until sauce coats the entire dish. ( Tongs are a great way to mix everything and make sure everything is coated evenly.) Parmesan can go last and you can use the 1/2 cup or more if you want 🙂


    Voila! Your one-pot meal is complete!
