My obsession with Avocado is at an all time high. While I have always loved this delicious, creamy thing we call Avocado ( or Avo) It seemed that for the longest time ever I could not under any circumstances find good ones. They either never ripened or got ripe too quickly. Then a few weeks back I was doing a recipe for a great brand of chips ( RW Garcia Snacks) and I decided to do a guacamole recipe. Because what else screams summer and get togethers than DIP? ( That’s also another thing I am obsessed with, all the dips. More on that at a later date)
I went to Trader Joes ( TJ’s for the win!) and picked up a bag of their mini organic avocados. Somehow when I made this recipe all seven avocados that I picked were PERFECT. I literally couldn’t have been happier. Anyone who works with Avocados can tell you that finding the perfect ones is like trying to find a Unicorn. Yes, it gets that bad! So my recipe was off to a great start and honestly…it just came out perfect the first time I made it. I wanted to share this final summer recipe with you all as an ode to this “summer” that flew out the door so fast I blinked and it was gone.
Avocados are indeed healthy as well, offering healthy fats and overall nutrition. They are perfect for smoothies, with a little salt, on toast and many other things. If you have been living on a rock somewhere and haven’t tried it well try this recipe. You wont be disappointed.
Also with recipes like this they are so adaptable you can add your own unique twist on it. This recipe is easy, and can be made in less than 20 minutes. Need to bring something for a potluck? Make this guacamole. Want to impress the in laws? Make this guacamole. Want to put on your pajamas and watch Netflix? Make this guacamole. Want to save the world? No never mind guacamole wont do that…. 🙂 You get my drift, for something so simple it can make a lot of people happy and that is one of my favorite things about food.

Perfect dip!
Perfectly Zesty Guacamole
Great for parties and get togethers ( or just for you) this guacamole recipe is easy, zesty & so delicious!
Ingredients
- 7 Mini Avocados
- 1/2 Cup Diced Onions
- 1 Cup Diced Tomatoes
- 1 Tsp Garlic Powder
- 1/4 Tsp Paprika
- 1-2 Juiced Limes
- 2 Tbsp Chopped Cilantro
- Salt & Pepper to Taste
Instructions

Mash up avocados until chunky. Mix in all other ingredients until well mixed. Add salt and pepper to your liking and VOILA! Easiest guac recipe ever 🙂
*Please note that my preference is fresh garlic ( about 3 cloves) but I didn’t have any on hand so I used garlic powder. For extra kick add a tablespoon of fresh minced jalapeños or chilies.
