I bought tons of Kale this past weekend, well maybe not literally tons, but you get the picture. I bought it because it was ridiculously cheap and was such a fantastical quantity I couldn’t resist. Today I decided to make as much as I possibly could with Kale and I came up with 2 recipes. They are super nutritious, super healthy, super yummy..anything else super? Not sure but you get the picture. Enjoy and let me know what you think.
Tart Kale Juice
1 1/2 Cups of Fresh Kale
1 Granny Smith Apple (cut in chunks)
Several squeezes of lime and lemon juice
2 Cups of Water
1 Sliver of lemon
Directions:
Pour the two cups of water into blender, put in the kale, then the apple and then the juices from lime and lemon along with the sliver of lemon. Blend on low until mixed and then blend on high until everything is pureed and you see this!
The end result is beautiful and tasty.
Scrambled Kale & Eggs
1 Egg
1/2 Cup of Kale
Crushed Red Pepper
Baharat Seasoning (this is like a Mediterranean seasoning I get at a local place here in Lowell)
Salt & Pepper
Olive oil
Directions:
Pour about a tablespoon of olive oil in a small pan, put the seasonings and then the Kale, let it saute a bit until wilted and then add the egg and quickly scramble. Voila, complete!
Great for breakfast or a small protein filled snack!
Kale is so versatile and I still have a bunch of it left over, but I am running out of ideas. Let me know in comments below what you think would be good!
