Anyone who follows my blog and follows my page on Facebook knows I love making dessert and coming up with new and different ways to make different things. In any given week I make 2-4 different types of dessert and lately I have been on a cupcake kick. Ever since I discovered Buttercream frosting and how you can experiment with almost any flavor I have wanted to try everything possible.
I found out it was National Dessert Day and decided to post the recipe I made last night. It is yummy and satisfying, rich with Maple flavor and a hint of Peanut Butter, some of my best cupcakes yet. As a warning the batter is extremely addicting…so is the frosting 🙂 Hope you enjoy them!
Peanut Butter Cupcakes w/ Maple Buttercream Frosting
Ingredients-Cupcake
1 1/2 Cup All Purpose Flour
1 1/2 Tsp Baking Powder
2 Tbs Peanut Butter
2 Eggs
1/2 Cup Milk
1 Stick Salted Butter (softened)
2 Tsp Vanilla
1 Cup Sugar
Ingredients-Frosting
4 Cups Powdered Sugar
1 Stick Salted Butter
2 Tsp Pure Maple Extract
1/3 Cup of Milk
Instructions:
Preheat oven to 350
Cake-Cream together the eggs, sugar, butter, vanilla and peanut butter, add dry ingredients and mix thoroughly. Add milk to smooth out the mixture pour into prepared muffin tins and bake for 12-15 minutes. Check with a toothpick to see if done.
While cooling make the frosting.
In an electric mixer beat the butter until whipped and creamy, add extract and slowly add the powdered sugar so that it doesn’t get everywhere. Add the milk to get the consistency you want, if you don’t add milk its incredibly thick
Once cooled frost the cupcakes and voila!
