Lately I’ve been having a major baking addiction, I think mostly due to the fact I am watching the Great British Baking Show plus I think Christina Tosi of Milkbar has something to do with it as well ( especially since they just opened up a new location in Harvard Square). I digress. What I am saying is I am baking a whole lot more now, experimenting with different flavors and really trying to get better at different aspects of baking. Sometimes its simple like this apple bread and other times I try to challenge myself and bake more difficult baked goods.
This apple bread was simple as I said but it was definitely effective. Autumn Glory Apples sent me a shipment of apples ( thank you!!), and I used that gift to make this delicious, lightly sweet bread that was just really good. I used one apple for both the filling and the topping and complimented them with spices like Cardamom- which really brought out such a yummy flavor. I also coated the apples in brown sugar and stirred them up so some of the juices would release which is one of my favorite things ever.

Baking is this beautiful process for me, makes me happy, makes other people happy ( cause I give them all the baked goodies) and also reminds me of some lovely memories I have as a kid growing up and baking. While over the years I’ve definitely had to work on some stuff and have had multiple baking “fails” this isnt one of them, so I hope you hop on the apple bread wagon and make this yourself.
Also- I used cardamom and other spices because I have someone in the house who hates cinnamon, yeah yeah I know horrible!

Easy Apple Bread w/Maple Icing
A delicious bread that is easy to make
Ingredients
- 1 1/2 Cup Flour
- Pinch Salt
- 1 1/2 Tbsp Baking Powder
- 1/8 Tsp Cardamom
- 1/8 Tsp Allspice
- 1/2 Cup Oat Milk Feel free to use any milk
- 2 Medium Eggs
- 3/4 Cup Brown Sugar Plus a bit more for apple mixture
- 1 Medium Apple, peeled, cored & diced
- 2 Tsp Maple Extract
Maple Icing
- 1 Cup Powdered Sugar
- 2 Tbsp Maple Syrup
- 2 Tsp Vanilla
- 2 Tbsp Milk As needed
Instructions

Preheat Oven to 350
Flour & butter up a loaf pan
Apple Bread Batter

Mix flour, salt, baking powder & spices together- set aside. Using a hand mixer, cream the butter and sugar together until light and fluffy. Add eggs one at a time making sure to mix each until thoroughly incorporated into mix.
Using a whisk, hand mix the flour gently into wet mixture, until everything is incorporated. Take care not to over mix.
Take the cut up apples and about 1/2 cup brown sugar and mix together until you can start seeing the juices.
Take half the mixture of apples and gently mix into batter, pour into prepared loaf pan. Take other half of apple mixture and put on top of the batter.
Bake for 45 minutes or until middle comes out clean. Careful not to over bake or bread will become dry.
Let cool in tin for 10 minutes, then ease out onto a cooling rack.
Maple Glaze

Wait until loaf is mostly cool and start on the glaze. In a small sauce pan mix the ingredients together except the milk. It will go from a lumpy mixture to a smooth mixture as you continue to stir. Depending on thickness add the milk, then while still hot drizzle over cooled loaf.
Enjoy with some coffee or tea for a perfect dessert!
