1981 Ramen Bar

When I heard that Lowell was getting our very own Ramen place I was ecstatic. Literally. I immediately followed them on Instagram, Facebook & Twitter waiting for every single update. Once they opened for a test kitchen run I wasn’t able to make it but then their grand opening was a few days ago and after an incredible event at Humanity Lowell which is right across the street, me and the hubs decided to check out 1981 Ramen Bar. Can I just say…wow! It was everything I expected it to be and more. It was also slightly nostalgic because I remember coming to Mambo Grill often which is what used to be here and to that point, they had a wonderful portrait of the old spot up on a shelf next to the bar. Great homage guys! They have this great Menu with wonderful flavors pulling ideas from different backgrounds not just Asian. I love this about them. The service was great and I can’t wait until I get to go again, another great restaurant to …

Pumpkin Mac & Cheese

When I decided to try this I wanted to be able to eat some baked cheesy goodness while also being conscious of eating clean, (to a degree)  🙂 Obviously the butter,  and cheeses add fat, but with the whole grain pasta, whole wheat bread crumbs, and non-fat milk it steps the game up just a bit while taking away none of the wonderful taste. Venture into this world of a different Mac & Cheese and enjoy the cheesy, gooey goodness. Pumpkin Mac & Cheese 1/2 Cup Ian’s Panko Whole Wheat Breadcrumbs 1 Tsp Cumin Black Pepper Sea Salt 2 1/2  Cups of Milk 1/4 Cup Butter 2 Tbs Butter 1/2 Cup Shredded Fontina Cheese 2 Cups Shredded Sharp Cheddar Cheese 2 1/2 Tbs All Purpose Flour Paprika 1/2 Pound Whole Grain or Brown Rice Pasta (Any will do) 2 Heaping Tbs of Organic Pumpkin Instructions: Preheat oven to 350 Boil pasta according to instructions in salted water. Drain and set aside Take 1/2 Cup of Bread Crumbs and toast with 2 Tbs of Butter over medium …

For the Love of Coffee

One of my favorite scents for candles is “Espresso”. I love the smell of freshly roasted coffee, the drip drip as it brews. I love all things coffee and I’m willing to try almost any flavor combination. I used to be a Starbucks junkie, not proud of it but I was I then shifted to all things local because I believe in the importance of supporting small businesses. In Lowell and the surrounding cities there are so many small coffee shops, and they are good;really good. Thus my decision for writing a blog post all about coffee. Yesterday was National Coffee Day and for one day everyone shared their Coffee pictures and selfies and I wanted to take all my coffee experiences and tell you which ones I think are some of the best. Believe me, I drink Coffee a lot. Even in the summer when everyone wants an Iced something I love a wonderfully made hot Latte. 🙂 Favorites: Brew’d Awakening Coffeehaus – Caramel Sauce Latte & Nutter Butter Latte Coffee & Cotton – …

Apple Loaf with Brown Sugar Apples

I love fall. The clothes, the colors, the leaves and of course the food and sweets. There are so many ways you can experiment with all the “Autumn” flavors. Pumpkin, Maple, Apple and the list goes on. I decided to use the apples I had gotten at Trader Joe’s as they were getting super ripe and I didn’t want to waste. I just figured cutting up some apples, pouring some brown sugar over them and letting them sit as I did everything else would be a good idea. I was completely right. I also loved how the apples created a beautiful topping, as the original idea was for them to sink into the batter. I  pulled the recipe for the loaf  from the Banana Bread I made simply substituting the white sugar for brown sugar and removing the bananas. The end result was a moist, lightly sweet bread perfect with some herbal tea as a nighttime treat or as a wake up treat with coffee. I hope you enjoy this wonderful fall treat! Sugared Apple …

Happy Fall!

Today is the first day of Autumn…is this good? I think it is. For every cook and Foodie, this is the season to make Apple Pies,Pumpkin Whoopie Pies, and Apple Crisp. For savory dishes you can have Roasted Butternut Squash, Acorn Squash Soup and the list goes on. The smells, the flavors, the colors and even the weather excite me about this season. So to kick it up I’ve made a wonderful little recipe. Half healthy because of Whole Wheat Flour,  but all decadence because of the homemade whipped cream. Hope you like it! Pumpkin- Chocolate Loaf w/ Cinnamon Whipped Cream Ingredients: 1 1/2 Cups Whole Wheat Flour 1/3 Cup Olive Oil 1 Tbs Semisweet Chocolate Morsels 1 Tsp Vanilla 1/8 Tsp Nutmeg 1/8 Tsp Ginger 1/8 Tsp Allspice 1/2 Tsp Cinnamon 1 Cup Brown Sugar 1 Cup Heavy Whipping Cream 1/2 Tsp Baking Powder 2 Tbs White Sugar 1/2 Tsp Cinnamon (for whipped cream) 2 Eggs 3/4 Cup Pumpkin Puree Instructions: Mix all spices, flour and baking powder in a bowl.(Exclude cinnamon and white sugar for …
