Apple-Maple Crumb Cake

This past weekend was an incredibly fulfilling and happy weekend spent with family, my love, friends and meeting/networking with new people. I truly enjoyed myself and wanted to wind down today after a long day of work and make some honest to goodness yummy food. On top of this  wonderful cake I also made a flavorful Bolognese Sauce to put over some Whole Grain Pasta. You can find my recipes for this under the recipes tab of the main menu… (but I always mix it up) 🙂

The title of this says it all. The combination of fresh apples with pure maple extract and some extra goodness makes for a supremely moist, crumbly topped cake. You can also do a few substitutions which I will suggest in the recipe below.

 

Apple-Maple Crumb Cake

Ingredients

1 Cup All Purpose Flour

1/2 Cup Whole Wheat Flour

1/2 Cup of Butter

1 Cup of Sugar

2 Eggs

1 1/2 Tsp Baking Powder

Pinch of Salt

1 Tbs Pure Maple Extract

2 Apples (peel, core and boil in sugar water for 10 minutes until soft then mash)

Dash of Allspice & Nutmeg

Crumb Topping

1/2 Cup Butter Softened

1 Cup of Oats (You can omit this if you don’t like oats)

1/2 Cup Brown Sugar

1/2 Cup Whole Wheat Flour

Instructions:

Preheat Oven to 350

Mix all cake ingredients together, pour into 8 inch springform greased pan. Mix crumb topping ingredients until crumbly and spread evenly over top of cake, bake for 25-35 minutes until middle comes back clean when poked with toothpick.

You can also pour some caramel over this….to make it richer, but I think it was perfect just like this.
